- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, mix the egg, milk, and melted butter. Add to the dry ingredients and stir until just combined.
- Fold in the grated apple. Let the batter rest for 5 minutes.
- Heat a lightly greased griddle over medium heat. Pour 1/4 cup batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
- For the cider syrup: bring apple cider to a simmer in a small saucepan. Stir in the cornstarch slurry and cook until thickened. Remove from heat and stir in butter and cinnamon.
- Serve pancakes warm with cider syrup drizzled over the top.
Notes
Try using different apple varieties for a unique twist. The syrup can also be made in advance and stored in the fridge.
