Ingredients
  

For the Apple Waffle Donuts
  • 1 1/2 cups all-purpose flour sifted
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 large egg room temperature
  • 1 cup milk room temperature
  • 1/4 cup unsalted butter melted and cooled slightly
  • 1 tsp vanilla extract
  • 1 medium apple peeled, cored, and finely diced (about 1 cup)
  • Cooking spray or butter for waffle maker
For the Vanilla Glaze
  • 1 1/2 cups powdered sugar sifted
  • 2-3 tbsp milk or heavy cream
  • 1/2 tsp vanilla extract

Method
 

Prepare the Apple Waffle Batter
  1. In a large mixing bowl, whisk together the sifted all-purpose flour, granulated sugar, baking powder, ground cinnamon, ground nutmeg, and salt.
  2. In a separate medium mixing bowl, whisk together the egg, milk, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.
  4. Gently fold in the finely diced apple until evenly distributed throughout the batter.
Cook the Waffle Donuts
  1. Preheat your waffle donut maker (or standard waffle maker) according to manufacturer instructions. Lightly spray or brush with cooking spray or melted butter.
  2. For a donut maker, spoon about 2-3 tablespoons of batter into each donut cavity. For a standard waffle maker, pour about 1/2 cup of batter into the center. Do not overfill.
  3. Close the lid and cook for 3-5 minutes, or until golden brown and cooked through. Cooking time may vary depending on your waffle maker.
  4. Carefully remove the cooked waffle donuts and place them on a wire rack set over a baking sheet to cool slightly while you prepare the glaze. Repeat with the remaining batter.
Prepare the Glaze and Serve
  1. In a small bowl, whisk together the sifted powdered sugar, 2 tablespoons of milk, and vanilla extract until smooth. Add more milk, 1 teaspoon at a time, until you reach your desired consistency.
  2. While the waffle donuts are still warm, dip each one into the glaze, turning to coat, or drizzle the glaze over them. Place them back on the wire rack to allow the glaze to set slightly.

Notes

For extra fritter-like texture, you can roughly chop the apples instead of finely dicing them.
