Ingredients

Vegetables
  • 4 cups shredded green cabbage You can substitute with red cabbage for a pop of color.
  • 1 cup grated carrots Feel free to use pre-packaged shredded carrots for convenience.
  • 2 medium apples Tart varieties like Granny Smith work well.
Dressing
  • 1/2 cup mayonnaise Can be substituted with Greek yogurt for a lighter version.
  • 2 tablespoons apple cider vinegar White vinegar can be used in a pinch.
  • 1 tablespoon sugar Honey or maple syrup can be used as natural sweeteners.
  • 1/2 teaspoon salt Essential for flavor enhancement.
  • 1/4 teaspoon black pepper Adjust to taste.

Method

Preparation
  1. Thinly slice the green cabbage and grate the carrots. Place them in a large mixing bowl.
  2. Core and thinly slice the apples. Toss with a bit of lemon juice if concerned about browning.
Dressing
  1. In a separate bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and pepper. Whisk until smooth.
Combine
  1. Pour the dressing over the cabbage mixture and toss until well coated.
  2. Taste and adjust the seasoning if needed.
Chill
  1. Let the coleslaw sit for about 20 minutes before serving to allow the flavors to meld together.

Notes

For best flavor, let the coleslaw sit in the fridge for an hour before serving. Consider adding apples just before serving to keep them crisp.
