Prepare Air Fryer
- Preheat your air fryer to 300°F (150°C). Line your air fryer basket or tray with parchment paper or air fryer liners.
Whip Egg Whites
- In a large, clean mixing bowl, add the egg whites and cream of tartar. Using an electric hand mixer, whip on high speed until stiff peaks form (the whites should hold their shape when the beaters are lifted). Set aside.
Combine Yolks & Flavor
- In a separate small mixing bowl, combine the egg yolks, softened cream cheese, salt, garlic powder, onion powder, and dried chives (if using). Mix until smooth and well combined, ensuring there are no lumps of cream cheese.
Fold Mixtures
- Gently fold the egg yolk mixture into the whipped egg whites using a rubber spatula. Be careful not to deflate the egg whites too much; the goal is to maintain as much air as possible for a light, airy texture.
Form Cloud Breads
- Spoon the mixture onto the prepared parchment paper in 6 separate, round 'cloud' shapes, leaving some space between each as they will puff up slightly.
Air Fry
- Carefully transfer the lined basket or tray to the preheated air fryer. Air fry for 8-12 minutes, or until the cloud breads are golden brown on top and firm to the touch. Cooking time may vary slightly depending on your air fryer model.
Cool & Serve
- Remove from the air fryer and let cool slightly on a wire rack. They will firm up a bit more as they cool. Serve immediately as a bread substitute, for dipping, or as a base for open-faced sandwiches.
Notes
For a sweet version, omit garlic powder, onion powder, and chives. Add 1-2 tablespoons of powdered erythritol and 1/2 teaspoon of vanilla extract to the egg yolk mixture.
Ensure your mixing bowl and beaters are completely grease-free when whipping egg whites, or they won't reach stiff peaks.
Store leftover cloud bread in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Reheat briefly in the air fryer or microwave to soften.
