Prepare the Au Jus
- In a small saucepan, combine beef broth, Worcestershire sauce, and garlic powder. Heat over medium-high heat until simmering, about 2-3 minutes. Alternatively, combine in a microwave-safe bowl and microwave on high for 1-2 minutes until hot. Keep warm.
Toast the Rolls
- Lightly butter the cut sides of the hoagie rolls. Place them cut-side down in a hot skillet over medium heat for 1-2 minutes until golden, or toast in a toaster oven until lightly crispy.
Assemble & Warm
- Layer half of the roast beef onto the bottom half of each toasted roll. Top with a slice of provolone cheese. Place the open-faced sandwiches back into the warm skillet (or toaster oven) for 1 minute, or microwave for 30 seconds, until the cheese is melted and beef is warmed through.
Serve
- Close the sandwiches and serve immediately with individual small bowls of the hot au jus for dipping.
Notes
For extra flavor, you can add a thin slice of onion or a few sprigs of fresh thyme to the au jus while heating. If you prefer a richer beef flavor, a touch of beef bouillon paste can be added to the broth.
