Ingredients
  

For the Au Jus
  • 1 cup beef broth low sodium
  • 1/2 tsp Worcestershire sauce
  • 1 pinch garlic powder
For the Sandwiches
  • 2 hoagie rolls split lengthwise
  • 6 oz deli roast beef very thinly sliced
  • 2 slices provolone cheese
  • 1 tbsp butter softened, or olive oil for toasting

Equipment

  • Small saucepan or microwave-safe bowl
  • Skillet or toaster oven

Method
 

Prepare the Au Jus
  1. In a small saucepan, combine beef broth, Worcestershire sauce, and garlic powder. Heat over medium-high heat until simmering, about 2-3 minutes. Alternatively, combine in a microwave-safe bowl and microwave on high for 1-2 minutes until hot. Keep warm.
Toast the Rolls
  1. Lightly butter the cut sides of the hoagie rolls. Place them cut-side down in a hot skillet over medium heat for 1-2 minutes until golden, or toast in a toaster oven until lightly crispy.
Assemble & Warm
  1. Layer half of the roast beef onto the bottom half of each toasted roll. Top with a slice of provolone cheese. Place the open-faced sandwiches back into the warm skillet (or toaster oven) for 1 minute, or microwave for 30 seconds, until the cheese is melted and beef is warmed through.
Serve
  1. Close the sandwiches and serve immediately with individual small bowls of the hot au jus for dipping.

Notes

For extra flavor, you can add a thin slice of onion or a few sprigs of fresh thyme to the au jus while heating. If you prefer a richer beef flavor, a touch of beef bouillon paste can be added to the broth.
