Ingredients

  • 16 oz cream cheese softened
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups frozen strawberries slightly thawed
  • 1 tbsp fresh lemon juice

Equipment

  • 9x5 inch Loaf Pan
  • Parchment Paper
  • Large Mixing Bowl
  • Electric mixer (handheld or stand mixer)
  • Spatula
  • Blender or Food Processor

Method

Prepare the Pan
  1. Line a 9x5 inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal. This will help you lift the frozen dessert out later.
Make the Cheesecake Mixture
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer (or whisk vigorously) until smooth and creamy, about 2-3 minutes. Ensure there are no lumps.
  2. Gradually add the sweetened condensed milk to the cream cheese mixture, beating until well combined and smooth. Scrape down the sides of the bowl as needed to ensure everything is fully incorporated.
  3. In a blender or food processor, blend the slightly thawed frozen strawberries until mostly smooth with some small pieces remaining. This adds a nice texture to the finished dessert.
  4. Gently fold the blended strawberries and fresh lemon juice into the cream cheese mixture using a spatula until just combined. Be careful not to overmix, as this can incorporate too much air.
Freeze and Serve
  1. Pour the strawberry cheesecake mixture into the prepared loaf pan and spread evenly with the spatula.
  2. Cover the pan tightly with plastic wrap and freeze for at least 4 hours, or preferably overnight, until completely firm.
  3. Once fully frozen, use the parchment paper overhangs to carefully lift the cheesecake out of the pan. Place it on a cutting board and slice into desired portions.
  4. For the best texture and easier slicing, allow the frozen cheesecake to sit at room temperature for 5-10 minutes before serving.

Notes

Store any leftover frozen cheesecake in an airtight container in the freezer for up to 2 weeks. For best results, ensure your cream cheese is at room temperature and well softened before mixing to achieve a truly smooth consistency.
