Assemble the Dessert
- In each of two small serving bowls, spoon out 3/4 cup of Greek yogurt.
- Drizzle 1 tablespoon of honey (or maple syrup) over the yogurt in each bowl. If using vanilla extract, add 1/8 teaspoon to each bowl.
- Sprinkle 1/4 teaspoon of ground cinnamon over the yogurt in each bowl.
- Gently stir the honey, cinnamon, and vanilla (if using) into the yogurt until just combined. Do not overmix.
- Evenly divide the mixed berries between the two bowls, placing them on top of the yogurt.
- Top each dessert with 2 tablespoons of granola and 1/2 tablespoon of chopped pistachios.
- Garnish with a fresh mint leaf, if desired, and serve immediately for best enjoyment.
Notes
For variations, try different fruits like sliced banana, figs, or peaches. Add a squeeze of fresh lemon juice to the yogurt for extra zing. A drizzle of chocolate sauce or a sprinkle of chocolate chips can also be a delightful addition. This dessert is best enjoyed fresh.
